A fantastic blend of fruit and feta cheese tops off this tossed salad, making it perfect for summer barbeques!

Recipe Ingredients

  • 3 (6 ounce) skinless, boneless chicken breast halves
  • 1 cup Italian-style salad dressing
  • 1 Granny Smith apple, cored and diced
  • 2 tablespoons lemon juice
  • 1 head romaine lettuce, chopped
  • 1 avocado, diced
  • 4 ounces feta cheese, crumbled
  • 1 ½ cups diced fresh strawberries
  • 1 cup dried cranberries
  • ¾ cup balsamic vinaigrette, or to taste

Cooking Directions

  1. 1 Place the chicken breasts and Italian dressing into a resealable plastic bag. Mix together to coat the chicken with the dressing, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  2. 2 Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  3. 3 Remove the chicken from the marinade, and shake off excess. Discard the remaining marinade. Grill the chicken breasts until no longer pink in the center, or to an internal temperature of 165 degrees F (74 degrees C), about 3 minutes per side. Set aside to cool while preparing the ingredients for salad, then dice.
  4. 4 Toss the diced apple with the lemon juice in a large mixing bowl until well coated; drain and discard any excess lemon juice. Place the lettuce into the mixing bowl, then sprinkle with the diced chicken, avocado, feta cheese, strawberries, and cranberries. Gently toss the salad with the balsamic vinaigrette, and serve immediately.

  2. This salad was amazing! My husband is not usually a fan of vinaigrette dressings but he even raved about this salad! We live in an area where fresh berries of all kinds are plentiful from spring to early fall so we will be making this a lot! Thanks so much for the idea! The flavors - Read more ...

  4. When I submitted this recipe it was intended that the dressing be served on the side and put on the salad to one's liking. If the balsamic is too strong, I have also served it with an olive oil vinaigrette or a raspberry vinaigrette.
  5. Very nice combination of flavors. I followed the recipe exactly but next time I'll cut back on the vinaigrette. It was a bit much.
  6. I have made this twice now-once without chicken as a side salad and once with chicken for dinner. It is great both ways and got rave reviews this is my favorite salad this summer!
  7. I should have served the balsamic vinaigrette on the side it was to strong and over-took the flavor's of everything else.
  8. Have you ever been craving something but you weren't sure what? This salad will probably satisfy it. It is sweet creamy and salty all at the same time. I couldn't find strawberries at the store (during strawberry season no less!) so I subbed blackberries. I also used a spring mix (it was on sale) for - Read more ...
  9. This salad was very quick to put together and the tastes went together very nicely. My very healthy-eating sis was impressed and my meat-loving hubby put dibs on the leftovers!! Thanks!
  10. AMAZING salad!! I didn't have italian dressing so I just grilled the chicken with garlic powder. I loved it and so did everyone else in our family... and they're "ranch dressing" people. Thanks so much!
