Very moist and flavorful pancakes to warm any morning.

Recipe Ingredients

  • 2 eggs
  • 1.66 cups milk
  • 1 (8 ounce) container plain yogurt
  • ¼ cup vegetable oil
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • 1 apple - peeled, cored and diced

Cooking Directions

  1. 1 In a large bowl, stir together the eggs, milk, yogurt and oil until well blended. Combine the flour, baking powder, baking soda, salt and cinnamon, stir into the milk mixture until smooth. Fold in chopped apple.
  2. 2 Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each cake. Cook until bubbles form in the cakes and the bottoms are golden brown. Flip and cook the other side. Serve warm with syrup or jam.

  5. The kids like it but I will cut my apples smaller next time. At first they were aprehensive about these chunks in their pancakes and I added 2 TBS wheat germ to make it even healthier and it doesn't change the flavor. Very good recipe. A change from the regular pancakes was needed here!
  6. Pretty good. If you're looking for a ready in 5 min. breakfast this isn't the one. I had trouble telling when they were ready to flip. It doesn't usually bubble until it has already burnt a little.
