I could never find the right oyster stuffing recipe, so I made my own with bacon, onion, mushrooms, and oysters. It is great with grilled turkey.

Recipe Ingredients

  • 1 pound bacon
  • ½ cup butter
  • 1 onion, sliced thin
  • 2 cloves garlic, minced
  • 1 (4 ounce) package fresh mushrooms, sliced
  • 1 cup white wine
  • 2 cups chicken stock
  • 1 (14 ounce) package seasoned stuffing cubes
  • 1 (10 ounce) jar oysters, drained and cut into thirds

Cooking Directions

  1. 1 Preheat oven to 350 degrees F (175 degrees C).
  2. 2 Place bacon in a large, deep skillet; cook over medium-high heat until evenly brown. Remove bacon to a paper towel-lined plate to drain. Reserve drippings in the skillet.
  3. 3 Add the butter to the bacon drippings and melt over medium-high heat. Cook the onion, garlic, and mushrooms in the butter and drippings until the onion has caramelized, 10 to 15 minutes. Pour the wine into the skillet; allow the wine to warm; remove from heat.
  4. 4 Place the stuffing cubes in a large bowl. Pour the vegetable mixture over the cubes. Add the chicken stock. Fold the oysters into the mixture. Transfer the stuffing to a 9x13 inch baking dish.
  5. 5 Bake in preheated oven until golden brown on top, about 30 minutes.

  1. It came out great... brought back memories of the dressing my mother made years ago.
  2. Absolutely Delish Didn't change a thing!
  3. Made this for Thanksgiving and it was a hit. I'm not a stuffing fan but this was delish!! I used smoked oysters and chopped the onion instead of sliced. This is a keeper for next year!!
  4. This year I was in charge of the Oyster Stuffing. My mother in law usually makes it so I was a little nervous. Let me tell you that this recipe is PHENOMENAL! I made exactly according to the instructions but I actually used a little bit more bacon and oysters. I will definitely be making - Read more ...
  5. Really great but will add more oysters next time!
  6. I made this for Thanksgiving. I have been looking and trying different stuffings and everybody loved it. I will probably mess around with some of the ingredients. Thank you for the recipe
  7. Excellent! I made it exactly as stated except (of course) I put the bacon in at the same time I added the mushrooms and onions. It was the most popular dish at the feast and I'll definitely put this on our Thanksgiving tradition list.
