A delicious repurposing recipe using prepared mashed potatoes, pancake mix, eggs and SPAM® with bacon to make piping hot savory pancakes. Great when eaten hot or cold.

Recipe Ingredients

  • 4 cups mashed potatoes
  • 1 (12 ounce) can fully cooked luncheon meat with bacon (such as SPAM® with Bacon), diced
  • 1 cup buttermilk pancake mix
  • 2 eggs, lightly beaten
  • 2 tablespoons vegetable oil

Cooking Directions

  1. 1 Mix mashed potatoes, luncheon meat, pancake mix, and eggs together gently in a bowl.
  2. 2 Heat oil in a skillet over medium heat. Spoon potato mixture into hot oil and press with a spatula to flatten evenly. Cook, covered, until bottom is crispy, 3 to 5 minutes. Flip and continue cooking until second side is golden and crispy, 3 to 4 minutes more.

Chef's Notes

Well-seasoned, prepared mashed potatoes are best for good results. There's no need to add salt before frying, the SPAM(R) has enough; Substitute canola oil for the vegetable oil if desired.

  1. Made it and will definitely make it again I did use a little more oil to fry it, my pan was not that big so I could only fry a little at a time
  2. delish! must try. only thing i did different was cut the recipe in half. 1/2 batch made 12 ice cream scoop sized portions.
  3. These turned out great! I used leftover mashed potatoes from the night before that were seasoned with green onion, red bell pepper, and cheese. Although I do not make a habit of eating Spam often, this would be great to take out on the boat for those early morning fishing trips.
