An Italian-style vegetable and feta cheese topping is the perfect enhancement to delicious baked halibut.

Recipe Ingredients

  • 1 teaspoon olive oil
  • 1 cup diced zucchini
  • ½ cup minced onion
  • 1 clove garlic, peeled and minced
  • 2 cups diced fresh tomatoes
  • 2 tablespoons chopped fresh basil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 4 (6 ounce) halibut steaks
  • ⅓ cup crumbled feta cheese

Cooking Directions

  1. 1 Preheat oven to 450 degrees F (230 degrees C). Lightly grease a shallow baking dish.
  2. 2 Heat olive oil in a medium saucepan over medium heat and stir in zucchini, onion, and garlic. Cook and stir 5 minutes or until tender. Remove saucepan from heat and mix in tomatoes, basil, salt, and pepper.
  3. 3 Arrange halibut steaks in a single layer in the prepared baking dish. Spoon equal amounts of the zucchini mixture over each steak. Top with feta cheese.
  4. 4 Bake 15 minutes in the preheated oven, or until fish is easily flaked with a fork.

  2. Tastes good but you can't really taste the halibut so save your money. next time I'll cook tilapia and think it'll taste the same
  3. I just eyeballed the ingredients and seasoned the fish with a a lemon pepper seasoning. This is a simple light and fresh tasting dish that can be eaten totally guilt free!   8. Perfect! This meal was extremely easy to cook and at half of the recommended serving I cooked for 15 minutes and the fish turned out moist and cooked to perfection. The colors of the ingredients added to a nice presentation. Definitely a dish to make during any night of the week.
  9. This was so good! It had a lot more flavor than I thought it would. I thought the feta might be a little strange with the fish but the saltiness perfectly complements the fresh vegetables. I loved it.
  10. Now this is the kind of recipe that I like. You in essence create a main course and side dish simultaneously. Hence I give it high marks for ease of preperation plus it tastes great. I tried this recipe because it was rated 5 stars and I concur.
