Our recipe for Banana Bread is incredibly moist and delicious. Country Crock® Spread and ripe bananas make this banana bread naturally sweet and rich. Perfect for breakfast, dessert, or an afternoon snack.

Recipe Ingredients

  • 3 large ripe bananas, mashed (about 1 1/2 cups)
  • 1 cup Country Crock® Spread
  • ¾ cup firmly packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt

Cooking Directions

  1. 1 Preheat oven to 350 degrees F. Brush 9 x 5-inch loaf pan with additional Country Crock® Spread; set aside.
  2. 2 Combine mashed bananas, Country Crock® Spread, brown sugar, eggs, and vanilla in large bowl with wooden spoon. Stir in remaining ingredients until blended. Spoon into prepared pan.
  3. 3 Bake for 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes on wire rack; remove from pan and cool completely.

  4. Forgot, I also used canola oil instead of Country Crock and baked it in a 9x9 pan.

  6. I tried pumpkin spice, and it was great. Tried more brown sugar in one batch, and it wasn't too sweet. I like brown sugar vs. white sugar. It gives a more subtle sweetness, and it has a slight hint of molasses or caramel to the flavor of the bread.
  7. I wasn't sure about the cinnamon, but it really makes the flavor pop. The bread is moist and delicious. I followed the recipe exactly and it turned out perfect.
