Tangy black bean and salsa verde tacos take only minutes to make and are flavorful and delicious! Great vegetarian dish! Great by itself, but also wonderful with tomatoes, avocado, cheese, etc. Add any of your favorite taco toppings! Could also be served as a side dish with another meal.

Recipe Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (7 ounce) can green salsa (salsa verde)
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • 6 taco shells
  • 2 ounces shredded Mexican cheese blend
  • 1 tomato, diced
  • 1 avocado, sliced
  • 1 cup shredded lettuce

Cooking Directions

  1. 1 Heat olive oil in a saucepan over medium-low heat; cook onion in hot oil until tender, about 5 minutes. Stir black beans, green salsa, garlic powder, chili powder, and cumin with the onion. Reduce heat to low and cook the mixture at a simmer until it thickens, 5 to 10 minutes.
  2. 2 Serve with taco shells, Mexican cheese blend, tomato, avocado, and shredded lettuce.

  3. This recipe is great. I cooked this for 15 minutes and it tasted like it needed more seasoning. I just let it keep cooking on very very low heat for another 15 minutes and the flavors were full on. So the recommended seasonings were perfect in my humble opinion.
  4. WOW!!! This dish is amazingly delicious and so easy to make. I made a few modifications--sautéed onion (yellow & red) bell pepper (red orange & yellow) and diced chili peppers for extra flavor. Added a pinch of salt & sugar to the mixture as well. My fiancé & loved it--definitely adding to my repertoire!

  9. This recipe was REALLY good! I just tweaked it by using garden salsa instead of the suggested green salsa. It is a great dish for those who don't like beans which I do not!
  10. This recipe was really easy to make I used instead of onions some leeks that I had on hand and needed to use up. I also baked them for a bit to melt the cheese and served them with lettuce tomatoes and sour cream on top. Yummy:)
