This pancake recipe is as good as it gets. Cinnamon, oatmeal and raisins make this a too good, and sinfully tasty pancake!

Recipe Ingredients

  • 1 ¾ cups apple cider
  • 1 cup quick cooking oats
  • 2 tablespoons butter, melted
  • 2 tablespoons cider vinegar
  • 1 teaspoon ground cinnamon
  • ¾ cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¾ cup raisins
  • 2 eggs

Cooking Directions

  1. 1 In a microwave safe bowl, combine apple cider and oats. In a separate bowl, stir together butter, cider vinegar and cinnamon. Stir the two mixtures together and microwave on high for 2 minutes. Let cool to lukewarm.
  2. 2 Stir together flour, baking powder, raisins and eggs. Blend flour mixture into oatmeal mixture.
  3. 3 Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

  1. So good! I thought the raisins might burn or get hard but I was wrong. I used whole wheat flour and found that I had to add an extra 1/2 cup. Wonderful taste wonderful smell! I'll be making these again!

  5. Not a hit at our table. We did not taste the oatmeal and they were not fluffy.
  6. i'm with hamsalad--too thick wouldn't cook through. and the vinegar gave them a slightly weird flavor. first daughter only ate one second is sitting here with two bites of the first one left--daughter #2 just scraped her plate. oh well they sounded good...
  7. Bob!!!! WHat are you talking about!!!! i made these pancakes and they didn't cook in the middle no matter how long I kept them on for. The batter was way to thick and the only good thing about them was the smell!! Not a good recipe!
  8. Everybody loved these. I did not add the raisins and I used spelt flour. These are very good.
