Great broccoli cauliflower recipe that everyone will love! The croutons on top give it that crunchy flavor everyone will love.

Recipe Ingredients

  • 2 cups broccoli
  • 2 cups cauliflower
  • 2 eggs
  • ½ cup mayonnaise
  • ½ cup chopped onion
  • 1 cup shredded Cheddar cheese, divided
  • ½ cup butter, melted
  • 1 (15 ounce) package seasoned croutons, crushed

Cooking Directions

  1. 1 Preheat oven to 350 degrees F (175 degrees C).
  2. 2 Put broccoli and cauliflower in separate saucepans and pour enough water into the saucepans to cover the vegetables completely; bring each to a boil and cook until tender, 3 to 4 minutes. Drain each and mix in a 11x7-inch baking dish.
  3. 3 Beat eggs in a bowl until creamy. Mix mayonnaise, onion, and 1/2 cup Cheddar cheese into the eggs; pour over the vegetables. Pour melted butter over the broccoli mixture and top with the remaining Cheddar cheese. Sprinkle croutons over the entire dish.
  4. 4 Bake in preheated oven until browned and bubbling, about 40 minutes.

  2. Too many croutons. Made it without Cauliflower. Doubled Broccoli and used extra aged sharp cheddar. Very tasty. Then my arteries went to Hell.
  3. I made this for dinner; added sliced chicken, diced ham and minced garlic! For the topping, I used GF Pablo mixed with grated Parmesan cheese. Needless to say it was a huge hit and scrumptious!

  5. I used homemade olive oil mayo and omitted croutons for an excellent grain-free recipe!
  6. I boiled the cauliflower and broccoli in the same pot (why dirty two?) Assembled as directed but it seemed a little dry. Topped with crushed Ritz crackers. It didn't wow me it was okay.
  7. Delicious! My husband, who claims not to like broccoli or cauliflower, ate half the casserole by himself!! I used cracker crumbs instead of croutons, and fresh broccoli and cauliflower.
