This is the one recipe we always cook when camping, it’s easy and very filling.

Recipe Ingredients

  • ½ pound sliced bacon
  • 4 cups potatoes, peeled and cubed
  • ½ onion, chopped
  • 6 eggs, beaten
  • 1 cup shredded Cheddar cheese

Cooking Directions

  1. 1 Cook bacon to desired doneness in a cast iron skillet over the slow burning coals of a campfire. Remove bacon from the skillet and set aside. Stir the potatoes and onion into the hot bacon fat. Cover, and cook until the potatoes are soft, about 10 to 12 minutes.
  2. 2 Crumble the bacon into the potatoes. Stir in the eggs, cover, and cook until set through, about 2 minutes. Sprinkle with the cheese, and allow to melt before serving.

  3. going camping today..will definitely use this as a breakfast since i need to fix it quick so the men can get into the river to fish..seems pretty easy and looks like a fast meal....if anyone has any other ideas for camping meals cooked over a fire i sure would like to hear them...
  4. This was ok. Needs salt and pepper. If I make it again I will partially cook the potatoes before I put them in the skillet; hopefully they won't stick as much that way.
  5. You can dice the potatoes (store in no-leak container with cold water) and fry & crumble the bacon at home first.
  6. This was very good. We used breakfast sausage instead of bacon. My picky kids ate it right up! My husband loved it as well. I made in in a skillet on the stove but we will definately make it camping this summer!
