Carrots made creamy with processed cheese and heavy cream, and baked with a bread crumb crust.

Recipe Ingredients

  • 8 cups sliced carrots
  • 1 large onion, diced
  • 1 tablespoon butter
  • ¼ cup heavy cream
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 ½ cups processed cheese food
  • ½ cup fine dry bread crumbs

Cooking Directions

  1. 1 Preheat oven to 350 degrees F (175 degrees C).
  2. 2 Bring a large pot of salted water to a boil. Add carrots and cook until tender but still firm, about 15 minutes. Drain and place in a 2 quart casserole dish. Stir in onion, butter, cream, salt, pepper and cheese; mix well. Sprinkle bread crumbs over the top.
  3. 3 Bake in preheated oven for 50 minutes.

  1. You VELVEETA only that makes the difference if its going to be good or not! Plus I use milk cream is too heavy. My family loves it!
  2. I thought that this was a pretty good recipe. I liked the cheese and carrots idea. I thought that the onion might have been a little off setting though. But overall I really enjoyed it and might make again.
  3. Sounds like the right idea! I always add a small amount of minced celery as well and a 1/2 tsp of ground mustard when I saute the onion and celery. I find it provides a more rounded taste. It is one of my family's favorite holiday dishes.
