A basic and simple recipe for carrot salad. The pineapple is optional. It tastes great as is but you can always add shredded coconut as well.
Recipe Ingredients
- 4 ½ cups shredded carrots
- 1 (8 ounce) can crushed pineapple, undrained
- ¾ cup raisins
- ½ cup sugar
- 2 tablespoons sugar
- ½ cup mayonnaise
- 1 ½ tablespoons freshly squeezed lemon juice
Cooking Directions
- 1 Combine carrots, pineapple with juice, raisins, sugar, mayonnaise, and lemon juice in a large bowl; mix well.
- 2 Refrigerate for 2 hours before serving for flavors to meld for best results.
