A delicious salad that is great for a quick snack, but attractive enough for entertaining. You can even have it as a meal in a sandwich, or as a salad atop a lettuce leaf.

Recipe Ingredients

  • 3 avocados - peeled, pitted and diced
  • 1 pound grilled skinless, boneless chicken breast, diced
  • ½ cup finely chopped red onion
  • ½ cup chopped fresh cilantro
  • ¼ cup balsamic vinaigrette salad dressing

Cooking Directions

  1. 1 In a medium bowl, combine the avocados, chicken, onion and cilantro. Pour the balsamic vinaigrette over everything, and toss lightly to coat.

  2. I added some tomatoes feta cheese and topped it with some sour cream ranch dressing and red pepper flakes...add a slice of bread and you have a great meal for a hot summer night.
  3. Excellent! I only had two avocado's and it still came out wonderful. I agree with another reviewer the cilantro makes it! It was great the next day on top of mahi mahi taco's we made. Great recipe.
  4. Very good salad! I added sliced grape tomatoes and used this salad as a filling in a wrap - really good and filling!
  5. A Definite Favorite!! We loved we love avocados...and it was a great mix!
  6. This one was different. I can't say I didn't like it but my husband and I agreed that it wasn't our favorite. I may try this one again b/c I didn't have white balsamic vinegar.
  7. Easy! I actually skipped the chicken as I didn't have any but I added some cranberries walnuts and grapefruit. It was great.
  8. I made this for my family as a side dish and this was a hit! Everyone LOVED it! They said that they could have just eaten a big bowl of this and nothing else and would have been happy!I will deffanatly keep this recipe!The calantro makes it!!I love that stuff!
  9. Delicious!!!!! I ate the "salad" as a sandwich on sourdough bread. Definetly recomend it as a lunchtime sand wich.
