Chicken Mole

Recipe Ingredients

  • 1 tablespoon vegetable oil
  • 1 (3 pound) chicken, cut into pieces
  • 1 bay leaf
  • ¼ teaspoon black pepper
  • ⅓ teaspoon cayenne pepper
  • ½ teaspoon paprika
  • ½ teaspoon ground cloves
  • ½ teaspoon ground cinnamon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 2 teaspoons brown sugar
  • 1 cup chicken broth
  • ¼ cup semisweet chocolate chips
  • ¼ cup raisins
  • 2 tablespoons sesame seeds

Cooking Directions

  1. 1 Heat the vegetable oil in a Dutch oven or large pot over medium-high heat. Cook the chicken pieces in the hot oil until golden brown on all sides, about 10 minutes. Remove from the pan and set aside. Reduce heat to medium, and stir in the bay leaf, black pepper, cayenne pepper, paprika, cloves, and cinnamon until fragrant, about 30 seconds. Add the onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  2. 2 Stir in the tomatoes, brown sugar, and chicken broth, and bring to a simmer over medium-high heat. Once simmering, stir in the chocolate chips until melted, then return the chicken pieces to the pot. Reduce heat to medium-low, cover, and simmer until the chicken is tender and no longer pink at the bone, 15 to 20 minutes. Stir in the raisins, and cook 3 minutes longer. Sprinkle with sesame seeds to serve.

  1. Disappointing and not what I was expecting. Good flavor which is why it's still 3 stars in my book. I followed another review and did this in my slow cooker for 3 hours on high so it would be really tender.

  3. Loved this. The only thing I would change is that I would put the sauce in a blender or food processer to homogenize it before serving.
  4. Very tasty! the only changes I made were a lot more cayenne since my kids like spicy food and 2 Tbls of chile powder. Also, I always marinate any meat before using it in a dish. put in a ziplock bag with oil ,garlic, chile powder, cumin salt and pepper for a few hours.
  5. This is fabulous - very rich and savory full of wonderful fragrance and flavor. The first time I made it it turned out a bit too sweet for my taste so now I leave out the brown sugar entirely and go a little heavier on the cayenne. That makes it perfect for me.

I did change a few things, I cooked the onion and garlic then added everthing else for the sauce except substituted the cloves for 1/2 tsp. chili powder.   8. this was very easy to make and turned out better than mole i have had in dining out. i baked this in the oven after i assembled the sauce on the stove. i slow cooked it for about 45 minutes and the result was yummy!

I used three pounds of boneless skinless chicken breasts (cut into thirds), 1/4 teaspoon cloves instead of 1/2, and added a chopped yellow bell pepper after reading the other reviews.
