A yummy easy coffee cake for one person. Fast and great!

Recipe Ingredients

  • 1 tablespoon butter
  • 2 teaspoons white sugar
  • ¼ cup all-purpose flour
  • 1 tablespoon applesauce, or as needed
  • ⅓ teaspoon baking powder
  • 2 drops vanilla extract, or to taste
  • 1 pinch salt
  • 2 teaspoons all-purpose flour
  • 1 teaspoon butter
  • 1 teaspoon brown sugar
  • ¼ teaspoon ground cinnamon

Cooking Directions

  1. 1 Heat 1 tablespoon butter in a microwave-safe mug until softened, about 10 seconds. Stir white sugar into butter until dissolved. Mix 1/4 cup flour, applesauce, baking powder, vanilla extract, and salt into butter-sugar mixture until batter is smooth.
  2. 2 Mix 2 teaspoons flour, 1 teaspoon butter, brown sugar, and cinnamon together in a bowl using your hands until the texture of lumpy sand is reached; sprinkle over batter.
  3. 3 Cook in the microwave until coffeecake appears to be barely set, 50 to 80 seconds. Cool before eating.

  1. This was just bad. Texture was weird and it was kind of tasteless. I dumped apple sauce on it and managed a couple bites before I gave up and threw it away. I can't even think of a way to improve it.
  2. I just tried this recipe to preview it as a quick breakfast for a day that will start rather early. I substituted the applesauce for one whole egg and a splash of vegetable oil. I also added more sugar to the batter along with honey and cinnamon. It's pretty delicious.

  5. Yum! I used a little bit less than one tablespoon of butter for the batter and it came out fine. For the applesauce I used cinnamon applesauce and I added a few teaspoons of chopped walnuts to the topping. Microwaved for 80 seconds and BAM! Instant coffee cake!
