A great dish to try anytime. Whitefish can be substituted for chicken if you don’t care for chicken.

Recipe Ingredients

  • 1 skinless, boneless chicken breast
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon ground coriander seed
  • 2 tablespoons extra virgin olive oil
  • 1 mango - peeled, seeded, and chopped
  • 1 orange, peeled and chopped
  • ⅓ red onion, chopped
  • 1 red chile pepper, seeded and chopped
  • 1 tablespoon chopped fresh cilantro
  • ½ teaspoon black pepper

Cooking Directions

  1. 1 Sprinkle chicken breast with salt and 1 teaspoon black pepper; set aside for 10 minutes. Evenly coat with ground coriander.
  2. 2 Heat the olive oil in a skillet over medium heat. Cook the chicken breast, browning well on both sides until no longer pink in the center. Remove from heat, allow breast to cool before slicing.
  3. 3 In a bowl, mix together the mango, orange, onion, chile pepper, fresh cilantro and 1/2 teaspoon black pepper. Pour salsa over sliced chicken breast and serve.

  1. Very refreshing taste for a healthy summer meal! I was short on time so I used the store made salsa and prepped the chicken as directed and it was still delicious. Looking forward to making the salsa fresh!

  3. Tried it today and it was delicious. Very easy healthy and tasty! Served it with asparagus and sweet potato and it looked so pretty on the plate my hubby even took a picture!
  4. This was quite good! I diced the chicken before salting (I omitted pepper) and cooking so that I wouldn't have to cool it before cutting.   6. The salsa was rather tasty but I wasn't too crazy about the lack of seasoning on the chicken. While the salsa is incredible and gives flavour I like to layer my flavours so they compliment each other. I think I'll play around w/ the seasoning for the chicken. The salsa is incredible tho!

  9. This mango salsa was divine. Truly a great summer recipe. A good mango salsa recipe is rare and this one tops the list. This was gone in no time from the center of our table!
