  • 1 large carrot, shredded

  • 2 green onions, chopped
  • 1 teaspoon minced fresh parsley
  • 1/4 cup olive oil
  • 1 tablespoon cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon curry powder

    So easy! Omitted the bacon, added dried cranberries, halved the oil and used whole wheat couscous = much healthier! Will add a bit more curry powder next time for a stronger curry flavor. ...
