Easy Low-Carb Keto Broccoli Cheddar Soup

This easy, low-carb, keto-friendly broccoli cheddar soup is so tasty and ideal for those winter nights that we all need some comfort food!

Recipe Ingredients

  • 1 teaspoon butter
  • 3 cloves garlic, minced
  • 2 ½ cups vegetable broth
  • 3 cups chopped broccoli
  • 1 cup heavy whipping cream
  • 3 cups shredded Cheddar cheese
  • 2 slices bacon, chopped and cooked
  • salt and ground black pepper to taste

Cooking Directions

  1. 1 Melt butter in a saucepan over medium heat. Cook garlic until tender, about 2 minutes. Add vegetable broth, heavy cream, and broccoli. Bring to a boil; simmer until broccoli is tender, about 15 minutes.
  2. 2 Add Cheddar cheese gradually, stirring constantly, until completely melted. Stir in bacon pieces. Season with salt and pepper.

  1. Loved it! The changes I made were that I diced up 1/2 a medium sized onion and sautéed them in the butter before adding the other ingredients. I also did half broccoli and half cauliflower and doubled the bacon. Delicious!

  3. Needed to use up a head of broccoli before it turned. Nice quick and easy soup and was perfect for a cool fall day
  4. This soup was amazing! I thickened the soup with 1 T of cornstarch before it got hot, and 1T of mustard powder. It was a hit with the grandkids!

  8. I added 1/2 a vidala onion and half a stalk of celery and a few cubes of asiago cheese. Don't skip the bacon it's fabulous with it.
