Easy Make-Ahead Green Bean Casserole

A make-ahead green bean casserole that does not include cream of mushroom soup or french-fried onions! This is a nice break from the norm, and whenever I serve it people really enjoy it. It has a little zip and is lighter on the palate while being quite satisfying. If you’re making it for more than 4 or 5 people, see my note before cooking.

Recipe Ingredients

  • nonstick cooking spray
  • 2 (10 ounce) packages frozen French-cut green beans, thawed
  • 2 tablespoons light butter
  • ⅓ cup onion, chopped
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup light sour cream
  • 1 cup shredded reduced-fat Cheddar cheese

Cooking Directions

  1. 1 Spray a shallow 1 1/2-quart casserole dish with nonstick spray.
  2. 2 Place beans in a large pot and halfway cover with salted water; bring to a boil. Cook until tender, 4 to 6 minutes. Drain and set aside.
  3. 3 Melt butter in a skillet over medium heat. Add onion and cook until tender, 5 to 7 minutes. Blend in flour, salt, and pepper. Stir in sour cream, stirring constantly, cooking until smooth and thickened. Mix in cooked beans, then pour into the prepared casserole. Cover and refrigerate until ready to bake.
  4. 4 Preheat the oven to 350 degrees F (175 degrees C).
  5. 5 Remove casserole from the refrigerator and sprinkle Cheddar cheese over top.
  6. 6 Bake in the preheated oven until bubbly, 15 to 20 minutes. Serve warm.

Chef's Notes

This is a great side, but everyone likes it so much that it doesn't go very far or leave much for leftovers. If I have 4 people over, this is gone in a flash. If you want to have leftovers or enough for people to go back for seconds, double the recipe and add 5 to 10 minutes to the cooking time.


  1. Great easy recipe, but needs more seasoning for me personally. Throw in some garlic powder, onion powder, or whatever your heart desires.
