Try this simple, melt-in-your-mouth, roasted spicy cauliflower, with just a hint of curry. Perfect as a vegan side dish or even as a quick and easy main dish.

Recipe Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon yellow curry powder
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 pound cauliflower florets, cut into 1/2-inch slices

Cooking Directions

  1. 1 Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  2. 2 Combine olive oil, curry powder, lemon juice, salt, and ground black pepper in a bowl. Add cauliflower and toss until well coated. Place in a single layer in the prepared baking sheet.
  3. 3 Bake in the preheated oven until golden and crispy, about 25 minutes.

  2. I loved this dish, and I didn’t think that I even liked cauliflower. The curry with the lemon was perfect. I served it alongside chicken tikka Masala and rice.
  3. I love cauliflower and love curry. Made NO changes to the recipe. The flavor is good 5 out of 5. The texture is gritty. I prefer roasted cauliflower w/ olive oil and garlic because I like the texture better.
  4. Great flavor. Let it sit in the marinade ~ 1 hour before roasting.
  5. I love curry, but all I tasted was lemon! When I make this again, I will use half of the lemon juice as it is a bit overwhelming. I love how quick and easy this recipe is.
  6. No changes were made. tasted great as a side dish. Fried chicken was the main. Will used with pork chops next time and rice and the main starch.

  8. Hubby loved the spice but said it was too salty. I used an entire head of cauliflower (so more than 1 lb) and my curry was salt-free. 1 tsp sounds ok to me but maybe I didn’t mix well enough. Will make again.
  9. Great flavors, but too much salt for me! I would decrease the salt by half and it would be yummy. It was ready in 25 minutes and simply tasteful!
