Easy soup to make using ingredients that I always have on hand. My husband loves this stuff. He likes to put a big spoonful of leftover mashed potatoes in the bowl and cover it with the soup. I like it served with corn chips and grated cheese. For a spicier soup, add a few diced jalapenos.

Recipe Ingredients

  • 1 pound ground turkey
  • ½ cup chopped onion
  • 1 (12 ounce) package frozen mixed vegetables (peas, carrots, green beans, corn)
  • 2 (10 ounce) cans diced tomatoes with green chile peppers
  • 1 (15 ounce) can ranch style chili beans
  • 1 (15 ounce) can chicken broth
  • 1 (1 ounce) package taco seasoning mix
  • 1 (1 ounce) package ranch dressing mix

Cooking Directions

  1. 1 Heat a large pot over medium-high heat and stir in the ground turkey and onion. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Add the mixed vegetables, tomatoes with green chiles, ranch beans, chicken broth, taco seasoning, and ranch dressing mix. Bring to a boil, then reduce heat and simmer on low for 20 minutes.

  4. I served it over left over Spanish rice from this site and also made taco seasoning and dry ranch dressing from this site. Awesome! Served topped with sour cream and shredded cheese with good bread on the side.
  5. I did not have the ranch seasoning on hand. So I just added a few extra seasonings to make up for that. It turned out really good and my husband went back for seconds.
  6. I tried this without making changes to the recipe and it turned out great. This recipe was very easy to make as well as flavorful. It needed no extra ingredients to make it tasty. This has definitely been added to my recipe box.

  9. Delicious! I used the frozen veges I had on hand and I added a can of red kidney beans and about 32 oz of broth. It makes a big pot of soup!
  10. Very easy and tasty. We made it with some fresh veggies instead of frozen so the prep time was lengthened. Original recipe said 4 servings. They must be HUGE! I filled a large saucepan and didn't even use 2 10-ounce cans of tomatoes.
