I wanted to make a healthier egg salad. This one uses avocado instead of mayonnaise. Serve in a sandwich or on crackers.

    Th is was great. I did fry up the onions for 3-5 minutes and then let cool as my tummy needs onions to be cooked. Was very yummy. Served it on top of a big slice of tomato.
