This is a fast and easy soup that I keep on hand at all times. Great for when an unexpected guest comes over. Inexpensive and freezes well, too. Warms your belly on those chilly days of winter.

Recipe Ingredients

  • 5 zucchini, sliced
  • 5 cups water
  • 7 cubes chicken bouillon
  • 1 (8 ounce) package cream cheese, softened and cut into 4 sections

Cooking Directions

  1. 1 Stir zucchini, water, and chicken bouillon cubes together in a stock pot; bring to a boil. Reduce heat to medium, place a cover on the pot, and simmer the mixture, stirring occasionally, until the zucchini is tender, about 20 minutes.
  2. 2 Drop cream cheese into the soup; cook and stir until the cheese melts, about 5 minutes.
  3. 3 Blend the soup with an immersion blender until smooth.

  2. Goodness, this is GOOOOD!!! I had already shredded one of those “the size of a small child” zucchini from the garden, so I ended up using about 7 cups of that (packed). And like another reviewer mentioned, I used 5 cubes. WOW! Added some shredded Parmesan & croutons to the bowl, too! Seriously, WOWZA!
  3. Much better if you use real chicken broth instead of a bunt hint of chemicals in a cube.

  5. I have changed this recipe only in amounts used. It works very well with squash the size of baseball bats [which I used to grate and freeze or give to the chickens] but you do have to adjust the amounts.   6. Do not be fooled by the few ingredients and simplicity of the preparation: This recipe is far greater than the sum of its parts. It flew well under the radar of the avowed zucchini loathers in my house, who had multiple servings. Outstanding!
