Quick, easy, fat-free, budget-friendly, and delicious coffee creamer made right at home. Will last in the refrigerator for 1 1/2 weeks.

Recipe Ingredients

  • ½ (12 fluid ounce) can fat-free evaporated milk
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon granular sucrolose sweetener (such as Splenda®), or more to taste

Cooking Directions

  1. 1 Pour evaporated milk into a small saucepan; add vanilla extract. Stir in sweetener. Bring to a boil, stirring constantly, to allow alcohol in extract to cook off, 1 to 2 minutes. Remove from the burner and let cool before using, or place in an airtight container and refrigerate.

Chef's Notes

Imitation vanilla extract can be used instead of pure; White sugar, Truvia(R), or powdered sugar can also be used but the amount will depend on taste.


  1. I like that this recipe is sugar-free and low in calories. I used homemade vanilla, doubling the amount. Those little black beans from the vanilla pods add so much flavor. Thanks for the recipe.
