This is an easy impressive pie. It is also very good with fresh fruit.

Recipe Ingredients

  • 1 (9 inch) pie shell, baked
  • 1 (15 ounce) can sliced peaches, juice reserved
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 1 cup milk
  • 1 cup sour cream
  • ¼ teaspoon almond extract
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Cooking Directions

  1. 1 Drain peaches, reserving 2/3 cup of syrup. Stir together pudding mix, milk, sour cream, and almond extract for 2 minutes, until very smooth. Pour filling into pie shell. Chill for 10 minutes.
  2. 2 Arrange peach slices in a nice pattern over custard in pie shell.
  3. 3 In a small saucepan, mix together reserved peach syrup and corn starch. Bring to a boil, and cook for 2 minutes. Remove from heat, and stir in lemon juice. Pour glaze over peaches. Chill until set. Serve.

  1. Yummy! I made this in an 8x8 pan with a graham cracker crust without the glaze with fresh peaches. Delicious.
  2. I made this last night with fresh peaches. I will make this again w/ 2 changes: I will layer fresh peaches with the filling, creating several layers and leave off the glaze. Everyone liked it just the way it was!

  5. This pie was very good! I had to bring a peach pie to an office party and it I didn't want to bring a traditional one because 3 others had to bring peach pie also. Everyone raved over this one and asked for the recipe. It is a very good cool summer treat!
