Fried Squid with Pineapple (Muc Xao Thom)

This tangy and sweet dish is perfect served over fluffy white rice. Be sure and not to overcook the squid or it will become tough.

Recipe Ingredients

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, cut into wedges
  • 2 pounds squid, cleaned and cut into 1/2 inch rings
  • ½ fresh pineapple - peeled, cored and chopped
  • 4 stalks celery, cut into 2 inch pieces
  • 4 tablespoons fish sauce
  • 1 teaspoon white sugar
  • 1 teaspoon ground black pepper

Cooking Directions

  1. 1 In a large skillet over medium high heat, heat the and the garlic. Fry until garlic is golden brown.
  2. 2 Add onion and stir-fry for 1 minute. Add squid and cook until they just turn white (do not overcook). Add the pineapple, celery, fish sauce, sugar and pepper. Stir fry for 2 minutes.

  2. We did not like this at all (I'm American my girlfriend is of Vietnamese decent). A very mild mellow flavor. The flavors didnt blend or meld together well. "Fried" is the wrong term for it. Like another reviewer said there are better uses for squid. Too much fish sauce also.
  3. This was fairly bland so I added some chili sauce which kicked it up a bit. All in all I'm sure I could find a better way to prepare squid. Not horrible but probably won't make it again.

  6. I agree this is a very good dish. Remember you can add tomatoes and cubed bell peppers in this dish too and garnish it with cilantro!:)
  7. YUM! I'd never cooked with squid before so I was a little worried but this turned out just great! I actually used oyster sauce instead of fish sauce because I had it around. Not fishy tasting at all:)
  8. Taste very good. My husband and I love it. I use pineapple crushed in a can and it still turned out so good.
