This is a great way to use leftover grilled chicken breasts from dinner the night before. I like it on wheat. My husband likes it on sourdough.

Recipe Ingredients

  • 1 cup mayonnaise
  • ⅓ teaspoon ground black pepper
  • ⅓ teaspoon garlic powder
  • ⅓ teaspoon celery salt
  • 4 cups chopped leftover grilled chicken
  • 2 celery stalks, sliced
  • ½ cup sweetened dried cranberries
  • ⅓ cup salted cashews
  • 8 slices bread, toasted
  • 4 tablespoons mayonnaise
  • 4 large red leaf lettuce leaves
  • 1 ripe tomato, sliced

Cooking Directions

  1. 1 Whisk together 1 cup of mayonnaise, pepper, garlic powder, and celery salt until combined. Combine the chicken, celery, cranberries, and cashews in a large bowl. Pour the mayonnaise mixture over the chicken mixture and stir until evenly combined.
  2. 2 Spread 1/2 tablespoon of mayonnaise on each slice of toasted bread. Divide the chicken salad between four of the slices of toast; top each with a lettuce leaf and a slice of tomato. Complete each sandwich with the remaining toast slices.

  3. This is very good. I have made it several times and it's the only chicken salad recipe I make. We prefer extra nuts and craisins and I use light FF yogurt w/some lemon juice rather than mayo because of an egg allergy. It's also good with pecans instead of cashews.
  4. I was not sure about the crasins and cashews but it was great! My son said it was delish! Next time I may chop the cashews and maybe try sourdough.
  5. This chicken salad was GREAT!! I made it for a party of about 30 people & everyone loved it. I ran a little short on mayo so I added a small amount of pineapple juice to keep it moist. I will make this again - just a smaller amount.
  6. Yummy! I cut the recipe in half because I only had 2 chicken breasts. I used 1 clove of garlic minced instead of powder. We didn't top with lettuce or tomatoe but it was still just fabulous! Perfect way to use that leftover chicken.
