This is a great way to use leftover grilled chicken breasts from dinner the night before. I like it on wheat. My husband likes it on sourdough.

Recipe Ingredients

  • 1 cup mayonnaise
  • ⅓ teaspoon ground black pepper
  • ⅓ teaspoon garlic powder
  • ⅓ teaspoon celery salt
  • 4 cups chopped leftover grilled chicken
  • 2 celery stalks, sliced
  • ½ cup sweetened dried cranberries
  • ⅓ cup salted cashews
  • 8 slices bread, toasted
  • 4 tablespoons mayonnaise
  • 4 large red leaf lettuce leaves
  • 1 ripe tomato, sliced

Cooking Directions

  1. 1 Whisk together 1 cup of mayonnaise, pepper, garlic powder, and celery salt until combined. Combine the chicken, celery, cranberries, and cashews in a large bowl. Pour the mayonnaise mixture over the chicken mixture and stir until evenly combined.
  2. 2 Spread 1/2 tablespoon of mayonnaise on each slice of toasted bread. Divide the chicken salad between four of the slices of toast; top each with a lettuce leaf and a slice of tomato. Complete each sandwich with the remaining toast slices.

  1. I used sliced almonds because that is what I had on hand. I added sliced grapes and a touch of spicy mustard. Yummy!!!!
  2. Delicious! Plus it's a great way to use up leftover grilled chicken or rotisserie chicken. I used 3/4 cup of Hellman's light mayo cut with 1/4 cup of reduced fat sour cream. I added a bit of curry powder for a little kick and I love the crunch from the celery. Since I didn't have - Read more ...
  3. This is very good. I have made it several times and it's the only chicken salad recipe I make. We prefer extra nuts and craisins and I use light FF yogurt w/some lemon juice rather than mayo because of an egg allergy. It's also good with pecans instead of cashews.
  4. I was not sure about the crasins and cashews but it was great! My son said it was delish! Next time I may chop the cashews and maybe try sourdough.
  5. This chicken salad was GREAT!! I made it for a party of about 30 people & everyone loved it. I ran a little short on mayo so I added a small amount of pineapple juice to keep it moist. I will make this again - just a smaller amount.
  6. Yummy! I cut the recipe in half because I only had 2 chicken breasts. I used 1 clove of garlic minced instead of powder. We didn't top with lettuce or tomatoe but it was still just fabulous! Perfect way to use that leftover chicken.
  7. Very good easy to prepare
  8. I added twice the cranberries and no tasted great because the chicken I used was grilled and blacked and it really added to the flavor! MMMM...
  9. Wonderful! I prepared this for a group of friends who totally loved it and today I'm sending them the recipe. Besides being great for sandwiches it would also be great on crackers.
  10. Wonderful combination. I used leftover baked chicken-very moist..
