Easy to make and easy to clean up! Delicious with rice pilaf or couscous.

Recipe Ingredients

  • ½ cup sliced carrots
  • 2 sprigs fresh dill, finely chopped
  • 1 teaspoon lemon juice
  • 1 pinch salt and ground black pepper to taste
  • 2 tablespoons butter, melted
  • 2 (8 ounce) halibut fillets
  • 1 medium zucchini, chopped

Cooking Directions

  1. 1 Preheat the oven to 375 degrees F (190 degrees C).
  2. 2 Combine carrots, half of chopped dill, lemon juice, salt, and ground black pepper in a bowl.
  3. 3 Cut 2 pieces of parchment paper or foil into 12x18 inch rectangles.
  4. 4 Brush the inside of parchment rectangle lightly with melted butter.
  5. 5 Arrange carrot mixture over half of each parchment rectangle.
  6. 6 Top carrot mixture with halibut fillets. Season with salt and ground black pepper.
  7. 7 Place zucchini slices on top of each halibut fillet. Sprinkle with remaining chopped dill.
  8. 8 Fold the parchment paper over fish. Make a 1/2 inch folded edge and crimp to seal.
  9. 9 Set packages on baking sheet and bake in preheated oven until fish flakes easily with a fork, 12 to 15 minutes.

  1. I too thought this was a little bland but I served it with a leafy green salad and a lemon vinaigrette that helped turn up the flavor. Also added some olive oil sliced the veggies thin and put them all under the fish. Not bad with a few adjustments.
  2. I found this to be quite bland. It is worth making though it just needs onion or garlic or something to make it tastier.   3. Very simple to make. I didn't have any carrots so I just combined the succhini lemon dill and fish in a foil packet. Tiny bit bland so it needs a tasty side dish to go with it.
