Ham Omelette with Maille® Old Style Mustard

This omelette, filled with ham, sour cream, and Dijon mustard, makes a filling breakfast or satisfying supper.

Recipe Ingredients

  • 3 eggs
  • Salt and freshly ground black pepper
  • 1 tablespoon water
  • 2 tablespoons butter
  • 2 teaspoons Maille® Old Style Mustard
  • 1 tablespoon sour cream
  • 1 ounce chopped ham

Cooking Directions

  1. 1 Beat eggs with salt, pepper and water. Heat butter in a pan over high heat until frothing. Pour in egg mix. Turn down heat slightly. Gently push cooked egg to the middle of pan with a wooden fork, allowing uncooked egg to run underneath.
  2. 2 When omelette is set on top - and browned underneath, spread with Maille® Old Style mustard, sour cream and sprinkle with chopped ham. Flip omelette over and slide onto a serving plate.
  3. 3 Best served with tomato salad, tossed in vinaigrette with basil leaves.

  1. I regularly make these minus the sour cream and mustard. I add mozzarella cheese and either bacon or ham, sometimes both, then cut them in half, slap them in a bagel, wrap them in foil and warm them up in the oven at 350 for nine minutes and it's the perfect breakfast sandwich.   3. This was a great dish to make with a low amount of ingredients but pretty tasty. I put a bit too much salt in mine. But otherwise healthy thanks mate!
  4. Try with other varieties of mustards....Edouard Fallot's mustards are also from Dijon and come in amazing varieties....mustard w green peppercorns, or basil, or tarragon. Available in gourmet stores and very tasty! Also varied this recipe as my daughter doesn't care for mustard and substituted small dollops of Boursin cheese instead - it was well appreciated!
