Healthier Sloppy Joes II

This healthier version of sloppy joes includes more veggies and real garlic. Be sure to serve on whole wheat buns!

Recipe Ingredients

  • 1 pound lean ground beef
  • ¼ cup chopped onion
  • ¼ cup chopped green bell pepper
  • 2 carrots, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon prepared yellow mustard
  • ¾ cup ketchup
  • 1 tablespoon brown sugar
  • salt and ground black pepper to taste

Cooking Directions

  1. 1 Heat skillet over medium-high heat; cook and stir beef, onion, green bell pepper, carrots, and garlic until beef is browned, about 10 minutes. Drain off liquids.
  2. 2 Stir in mustard, ketchup, and brown sugar and mix thoroughly. Reduce heat to low and simmer until sauce has thickened, about 30 minutes. Season with salt and pepper.

  2. Fantastic! Super easy and healthy. I used some chilis in adobo sauce to give a kick and added crushed red pepper flakes. Used cabbage instead of bread for fewer calories. Thank you!
  3. Delicious and hubby loved it too! Increased bell pepper, carrot and garlic. Also added chopped celery (same amount as carrot and bell pepper). For the sauce I used ketchup and chilli sauce with a bit more prepared mustard than the recipe called for and a few dashes of Worcestershire sauce. Will definitely make again!

  9. I like sneaking extra veggies in dinner. I should have chopped the carrots much smaller but my husband and I didn't mind. Children would have. These burgers had a slightly spicy taste. I also lightened this recipe a bit by using Quorn instead of ground beef.
