My best attempt at duplicating a delicious recipe from a local restaurant. It’s the perfect blend of salty and sweet! Serve as a sandwich on a croissant, sourdough bread, or pretzel bun or with lettuce for a delightful lunchtime treat.

Recipe Ingredients

  • 2 avocados, peeled and pitted
  • 1 ½ cups light mayonnaise
  • 3 tablespoons light sour cream
  • 2 teaspoons garlic powder
  • 2 teaspoons lemon juice
  • 1 teaspoon honey, or more to taste
  • salt and ground black pepper to taste
  • 3 cups chopped cooked chicken breast
  • ¼ cup diced onion
  • 1 stalk celery, chopped

Cooking Directions

  1. 1 Mash avocado, mayonnaise, sour cream, garlic powder, lemon juice, and honey together in a bowl until smooth and creamy; season with salt and pepper. Fold chicken, onion, and celery into avocado mixture until coated.

  7. I needed a quick recipe to use up some very ripe avocados. This was perfect! Good flavor. I didn't have sour cream so I just added a little more mayonnaise. I even added a chopped jalapeño to give it a kick.
  8. I used canned chicken breast to cut down on time. It's pretty amazing!
