Full of fresh flavors.

Recipe Ingredients

  • 1 lemon
  • ¼ cup honey
  • 1 pound salmon fillets
  • Freshly ground Spice Islands® Black Pepper Adjustable Grinder
  • 1 ½ teaspoons Mazola® Corn Oil
  • ½ cup thinly sliced red onions
  • 2 cloves garlic, thinly sliced
  • 1 (5 ounce) package fresh baby spinach
  • ¼ cup dry white wine
  • ¼ teaspoon Spice Islands® Crushed Red Pepper
  • ⅓ teaspoon salt
  • 1 tablespoon chopped, toasted pine nuts

Cooking Directions

  1. 1 Preheat oven to 450 degrees F. Grate zest from lemon; set aside. Squeeze 1 tablespoon lemon juice into a small bowl. Add honey and mix well. Line a baking sheet with foil; spray foil with cooking spray. Place salmon fillets on baking sheet. Generously season with black pepper. Drizzle with half of the honey mixture. Roast salmon for 10 to 12 minutes or until fish is lightly browned and flakes easily. Brush on remaining glaze as needed. For a browner glaze, broil on HIGH the last few minutes of cooking.
  2. 2 Heat oil in a large nonstick skillet over medium-high heat. Add onions and garlic and saute 3 to 5 minutes. Add spinach and white wine. Continue to saute until spinach is wilted and most of the liquid has evaporated. Stir in 1 teaspoon lemon zest, crushed red pepper and salt. Divide spinach evenly on top of salmon fillets; sprinkle with pine nuts. Serve immediately.

Reviews

  1. Made it just as the recipe said except I used apple juice instead of the white wine and almonds instead of pine nuts. It was delicious and we will definitely have it again.
  2. This was good but not fantastic. I doubled the spinach mixture per reviews and lowered the amount of honey. Maybe I lowered it too much because it wasn't sweet at all and not much flavor. I didn't like the wine flavor with it.. I would prefer vegetable broth I think. It definitely needed to have - Read more ...
  3. Excellent recipe! My husband loved it. The pine nuts were a nice touch. Prepared it as directed except for the white wine. I drank all my wine so I had to use apple cider.
  4. A big hit with my family including the kids! Yummo!
  5. Excellent, although I almost doubled the spinach/garlic/onions because I really like them.
  6. I make salmon 1-3 times a week and this is a great new recipe to add! Very tasty and using Mazola corn oil really lets the flavors of the fish shine through! I doubled the spinach because it was so good.
  7. We love & eat a lot of Salmon. While this recipe was a little bit on the sweet side for us we did like it. However the STAR of this dish was the Spinach! Fantastic! The addition of the Pine Nuts was also good! I will make this combination of Salmon and Spinach again but - Read more ...
  8. Very tasty salmon! I really liked the pine nuts but they are very pricey right now you could leave them out IMHO. Thanks Mazola will make again!
  9. This was an easy but flavorful way to prepare salmon. My husband loved it! I served it with Berry Spinach Salad also a Mazola recipe on All Recipes. They are great together!
  10. This was Wonderful! I followed the recipe to the letter. The only tiny issue is we wanted more of the spinach! Without the spinach we found the salmon needed a little oomph but when eaten together (as the recipe intends) it was really fantastic! Thank you Mazola!
