This has also been called shepherds pie. I love the colors, and it’s easy. Another family pleaser. Ground beef layered with mixed vegetables and mashed potatoes.

Recipe Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (15 ounce) can green beans, drained
  • 1 (15 ounce) can carrots, drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can peas
  • ½ pound processed cheese food, sliced
  • 4 cups prepared instant mashed potatoes

Cooking Directions

  1. 1 Preheat oven to 350 degrees F (175 degrees C).
  2. 2 In a large skillet over medium high heat, saute the beef and onion for 5 to 10 minutes, or until meat is browned. Drain excess fat and place this mixture in the bottom of a lightly greased 9x13 inch baking dish.
  3. 3 Layer the green beans, carrots, corn and peas over the beef mixture. Place the cheese over the vegetables.
  4. 4 Prepare the potatoes according to package directions, but add some extra milk or water to make it a little runny. Cover the entire casserole with the potatoes.
  5. 5 Bake at 350 degrees F (175 degrees C) for 1 hour, or until potatoes get slightly crusty and the sides of the dish are bubbly.

  1. Wow! Was that ever good! I used 16oz of frozen mixed veggies and grated cheddar cheese (saving a handful to put on the potatoes for visual appeal) and it came out great! This is a great alternative for those who are not huge fans of the condensed soup version. I added some spices for extra - Read more ...
  2. My meat and potatoes man LOVED this (as did my roommate and daughter)...but me? Well - it was okay but I think I'd rather do the tater tot hotdish thing (also meat & potatoes dish) than this. Loved the ease of the recipe and its not difficult and I guess when your short on time - Read more ...
  3. I'm not quite sure why it's called "Jacob's Coat"--if it's referring to the coat of many colors in the Bible it was Joseph who owned this coat. Anyway this was very good. I used half instant and half regular mashed potatoes and I added some mushrooms and green peppers to give it a nice flavor. - Read more ...
  4. My husband and I LOVED this. I make this often and it's very easy to reheat. I omitted the cheese and it's just like the old fashioned shepherd's pie my grandmother used to make.

  9. This was a good basic recipe although I omitted canned green beans and carrots. Instead I added one chopped green pepper and sauteed with the ground beef and onion and also used creamed corn instead of whole kernel corn. I also subtituted 1 cup grated cheddar cheese for the 1/2 lb. processed cheese and prepared - Read more ...
