I had this on the fourth of July for the first time. It’s my cousin’s recipe. I almost ate the whole bowl. So light and fresh. Serve with chips. Tostitos® Scoops!® work great!

Recipe Ingredients

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (11 ounce) can shoepeg corn, drained
  • 1 (8 ounce) package crumbled feta cheese
  • 4 green onions, chopped
  • ¼ cup olive oil
  • ¼ cup cider vinegar
  • 2 tablespoons white sugar

Cooking Directions

  1. 1 Mix black beans, corn, feta cheese, and green onions together in a bowl.
  2. 2 Whisk olive oil, vinegar, and sugar together in a separate bowl until smooth; drizzle over corn mixture and toss to coat.
  3. 3 Cover bowl with plastic wrap and refrigerate until flavors blend, at least 30 minutes.

  1. This is too good !!!! i added some jalapeños for little kick. goes great with mexican food, absolutly love it. great recipe, id give it a 6th star if i could!
  2. Too sweet for our taste I might try again but without sugar.
  3. I thought it was a bit too sweet but still very good. I added a few teaspoons of lime juice to help cut down the sweetness. I would only use 1 T sugar next time.
  4. Loved it! Added a little chopped cucumber and some lime juice. Delish!!!
  5. very easy to make. my modifications is that I used corn off the cob and used half the amount of onions and sugar. yummy side dish for any BBQ
  6. We thought this was very good. I did go short on the sugar to suit our personal preferences. I'll make this again because it is a good side dish for a summer picnic! Thanks nancy!
