Kale with Pine Nuts and Shredded Parmesan

Kale is sauteed in butter and tossed with toasted pine nuts and shredded Parmesan cheese. Looks fancy enough for the holidays!

Recipe Ingredients

  • ¼ cup pine nuts
  • ¼ cup butter
  • 1 bunch kale - stems removed, roughly chopped, and rinsed
  • 1 teaspoon distilled white vinegar
  • salt and ground black pepper to taste
  • ½ cup shredded Parmesan cheese

Cooking Directions

  1. 1 Toast pine nuts in a skillet over low heat until golden brown and fragrant, about 5 minutes.
  2. 2 Melt butter in a large skillet over medium heat. Place kale in the melted butter and cook until tender, 10 minutes.
  3. 3 Toss cooked kale with vinegar in a serving bowl; season with salt and pepper. Sprinkle with Parmesan cheese to serve.

  3. Probably my fault but I used too much butter and they were pretty much gross. I'm going to try a different kale recipe.
  4. Not sure what happened but this does NOT make 6 servings! This was my main dish but barely enough for 2. I had to add sun dried tomatoes and sliced toasted almonds to try to stretch it out for my family. The flavor was time lots more really shrinks down.

  8. This is such a great sidedish with just about anything! Make it just like the tweaking was needed for me.
  9. I really enjoyed this. My husband and kids weren't thrilled with it but I'm not really counting their opinion on this one. I did use almonds instead of pine nuts.
  10. Very tasty even without the parmesan! I cut back the amount of butter which I think helped but will definitely cook this again.
