A delicious Auto Immune Protocol Diet (AIP) alternative to mayo. Perfect as a dip for sweet potato fries!

Recipe Ingredients

  • 1 ripe avocado, halved and pitted
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons balsamic vinegar, or more to taste
  • 1 ½ tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon coconut oil, melted
  • 2 cloves garlic, minced
  • ½ teaspoon sea salt

Cooking Directions

  1. 1 Combine avocado, olive oil, balsamic vinegar, maple syrup, apple cider vinegar, coconut oil, garlic, and sea salt in a bowl
  2. 2 Blend with an immersion blender until creamy and smooth.

  1. Wayyy to much vinegar. Made it to put on burgers and had to add a second avocado to the existing ingredients and it still was way to strong
  2. Thanks Karen for posting this! Very yummy! I might try white vinegar instead of balsamic next time and maybe add a bit of lemon to make it a little more reminiscent of miracle whip. Although it was very delicious as is!
  3. We (the kids and I) liked this! I had 2 avocados to use up, so I used both but kept all the other ingredients basically the same.
