This keto cocoa mug cake is like a massive chocolate cup just waiting for you to take a bite. This rich keto-friendly, gluten-free, and dairy-free treat will be sure to become a staple in your home.

Recipe Ingredients

  • 6 tablespoons almond flour
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons low-calorie natural sweetener (such as Swerve®)
  • ½ teaspoon baking powder
  • ⅓ teaspoon salt
  • 2 eggs
  • 2 tablespoons coconut oil, melted

Cooking Directions

  1. 1 Mix together almond flour, cocoa powder, sweetener, baking powder, and salt in a small bowl.
  2. 2 Beat eggs in a bowl using an electric mixer until light and fluffy. Slowly add melted coconut oil and beaten eggs to the almond flour mixture, whisking everything together with a fork.
  3. 3 Lightly grease 2 microwave-safe mugs. Pour batter into mugs, leaving at least 1 inch of empty space at the top so the cakes can rise.
  4. 4 Microwave on high power for 1 minute. Test cakes for doneness. Continue cooking in 10 second-intervals, if necessary, until cakes are cooked through and not runny in the middle.

Reviews

  1. Consistency was good and chocolate taste was good but it was so unsweet. It was very good with enough sugar dumped on top.
  2. I didn’t like it at all. It was dry. I didn’t like the texture nor the flavor. The only reason I gave it two stars instead of one is because my husband liked it. I think that next time I will use butter instead of coconut oil. And I will definitively add more sweetener.
  3. Reduce cooking time to 45 seconds
  4. YUMMY! followed the recipe to the T! Started a KETO diet and this is my first sweet treat. I used Steveia sweetner. Can't believe how easy it was. It makes 2 small portions- we both wanted more! Next time I will double the recipe for 2 of us!
  5. Needs more sweetener.
  6. Was very bitter will make again with more sweetner next time.
  7. I love the concept and the ingredients are great. However the taste was terribly bitter. It needs much more sweetener than the recipe calls for. I'll make it again with adjustments. I should have noticed the proportion of cocoa powder to sweetener when I made it. That one change will make this mug cake so - Read more ...
  8. This recipe is a must try! I absolutely could not believe how easy this was to make! I decided to try it as a fast and easy desert. I followed the recipe to the detail to see what the untampered cake would taste like. Perfection! My next batch I will add a few chocolate chips - Read more ...
