My husband and I have been watching our carbs. One night I threw together these ingredients, and it turned out fantastic! I hope this helps you on your diet journey. It’s very quick and easy to make. Enjoy!

Recipe Ingredients

  • 2 ¾ cups cauliflower florets, broken into bite size pieces
  • 2 cups spinach leaves
  • 2 tablespoons butter
  • 1 teaspoon sea salt
  • 2 spreadable cheese wedges (such as The Laughing Cow® Creamy Swiss Garlic & Herb)

Cooking Directions

  1. 1 Run cauliflower through a food processor to get 2 cups of cauliflower grounds a bit larger than the consistency of grits.
  2. 2 Combine cauliflower, spinach, butter, and salt in a large pot over low heat. Cover and cook until cauliflower is soft and spinach has wilted, 5 to 7 minutes. Stir in cheese wedges until the cauliflower and spinach are coated and no cheese clumps remain.

  4. This was really tasty but I had to modify as I made it. Two tablespoons of butter wasn't enough. I went with four and added some garlic powder to the butter when it melted. After adding the cauliflower rice and spinach and covering it wasn't cooking fast enough on low (spinach wasn't wilting after 15 - Read more ...

  7. I didn't have the cheese mentioned in receipe so used cream cheese swiss cheese and sprinkled garlic.
  8. This is simple and wonderful. I followed the recipe exactly and the family loved it. The time of 15 min is also accurate (which is unusual on this site for me). It has a mild flavor which makes it perfect as a side with heavy flavor in the main dish. This has a lot of - Read more ...
  9. Was looking to add some veggies to my keto creamy curry and didn't have a food processor so I grated the cauliflower. I also added 2 cloves of garlic and used coconut oil instead of butter and that really complimented the dish.
