I make eggs in a mug quite often. It’s easy and so versatile you can add pretty much anything that’s in your fridge! Try it with ham, swiss and asparagus! Or maybe those cooked frozen sausages cut up with peppers and onions! You can even top it with pizza sauce and pepperoni!

Recipe Ingredients

  • 1 tablespoon butter, or as needed
  • 2 eggs
  • 2 tablespoons ricotta cheese
  • ¼ cup diced tomatoes
  • 2 leaves fresh basil
  • salt and ground black pepper to taste
  • 1 pinch dried oregano
  • 2 teaspoons grated Parmesan cheese, or to taste

Cooking Directions

  1. 1 Brush the inside of a microwave-safe mug with butter.
  2. 2 Crack eggs into mug and top with ricotta cheese, tomatoes, and basil; season with salt, pepper, and oregano.
  3. 3 Cook in the microwave for 1 minute; stir and continue cooking in 15-second intervals, until set, about 1 minute more. Sprinkle Parmesan cheese over eggs.

Chef's Notes

This recipe is meant to be an easy weekday breakfast, you can make it and take the mug on the go, but if you want to make a pretty presentation, you can remove the eggs from the mug, plate and garnish with fresh basil, tomato, and Parmesan.


  1. We use Ball jars so we can put a lid on them and make up several in advance for grab and go mornings. If it makes a good omelet, it usually makes a good jar!
  2. Excellent Recipient!! Who knew you could do this in the microwave. I used egg whites and added ham mushroom and onion to basil and tomato. It cane out great' Thanks for sharing!
  3. This was seriously a great breakfast! I cut everything in half for one small serving for me. I used cottage cheese instead of ricotta and it worked great.   4. Made mine in a soup mug and with Swiss Miss Milk Chocolate mix microwaved for 2mins. Inverted the mug over a plate and the cake "plopped" down about 5mins later. Perfectly scrumptious as a quick treat. Will consider placing a cupcake liner inside the mug next time.

EXCELLENT! tweaked it some to be a little more "figure friendly"...subbed all whites for eggs, olive oil spray for butter and all cheeses were part skim/low fat...also added quinoa for some necessary carb #s--had this right before my workout...quick, easy and....PORTABLE! will DEF make again and again!
  6. Delicious! I made mine in a bowl and the recipe didn't specify if you were supposed to scramble up the eggs or not so I did. Great combo of flavors and a nice fresh tasting breakfast YUM! Thanks for sharing.:)
