Servings 4 mini pies Calories 614.3

I love these mini pies because I can serve several different types together and everyone can select their favorite. This mini apple pie uses Granny Smith apples. I bought the mini pie dishes online, and they are really fun!

Recipe Ingredients

  • 2 pastries for 9-inch single crust pies
  • 3 cups diced Granny Smith apple
  • 2 tablespoons instant tapioca
  • ½ cup white sugar
  • lemon juice
  • ⅓ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon

Cooking Directions

  1. 1 Preheat oven to 400 degrees F (200 degrees C).
  2. 2 Cut 4 6-inch rounds out of the pie crusts, and fit them into 4 5-inch mini pie dishes. Cut remaining pie crust into 1/8-inch strips, and set dough aside.
  3. 3 In a bowl, mix the diced apple, tapioca, sugar, lemon juice, nutmeg, and cinnamon until thoroughly combined; allow the mixture to stand for 5 minutes to soften the tapioca. Stir the mixture again, and spoon into the pie shells. Use the strips of dough to weave a small lattice crust on top of each pie, and pinch the strips onto the bottom crust.
  4. 4 Bake in the preheated oven until the pies are browned and the filling is thickened and bubbling, about 30 minutes. Cool before serving.

  1. Perfect. I didn't use the tapioca and added about 2 teaspoons of flour. I also used half white and half brown sugar and microwaved the apples in lemon juice for 45 seconds. Twas yummy!! PS I DID use a muffin pan instead and will upload a photo asap. Some came right out but the ones - Read more ...
  2. These were pretty good! I didn't use the tapioca though. I added flour (about 2 teaspoons). I also added brown sugar in the filling and also mixed some with butter and and put it on the top of the pies for the last 5-7 min of baking pretty good!
  3. I made these for Thanksgiving using muffin pans instead of mini pie pans. Thankfully I had Teflon tins because I don't know how I would have removed them in tact otherwise. The pies were a big hit with my family and I will definitely be making these again. I shortened the baking time to 25 - Read more ...

  6. I used the pie dough recipe from - it is excellent - I bought the 6 inch ceramic pie plates from Hamilton Beach - then got this recipe - did not have tapioca so added 2 T. flour to thicken - thought it was very good -- would definitely make them again. Great if - Read more ...
  7. Definite keeper!! Added a bit of brown sugar and vanilla. Stretched the recipe for 6 jumbo muffin cups.
  8. These were so tasty! I made 2 changes to the recipe, though. I cut out the tapioca and added a crumb topping like on dutch apple pie. My husband loved them!!! No need for the tapioca in my opinion.
  9. Mini apples are great because they take less time to cook and cool!
