Mojito Salad

Everything you love about a Mojito except the rum! After having a few friends over for some mojitos, I was in the mood for salad the next day and had all the right ingredients — better than the hair of the dog!

Recipe Ingredients

  • 2 limes, zested and juiced
  • 2 romaine hearts, chopped
  • 2 Granny Smith apples - peeled, cored, and cut into chunks
  • ½ cup chopped cucumber
  • ⅓ cup chopped fresh mint
  • ¼ cup simple syrup
  • 2 tablespoons lemon juice, or to taste

Cooking Directions

  1. 1 Combine the lime zest, lime juice, romaine lettuce, apple, cucumber, mint, simple syrup, and lemon juice together in a large bowl; toss to combine.

  2. I literally tasted like a Mojito but I couldn't eat it as a big salad. There isn't a lot of different flavors to want to eat it as a meal. But it is a very nice refreshing side salad.

  4. I would substitute frozen limeade concentrate for the limes and simple syrup.
  5. Very fresh and clean tasting salad! I substituted agave nectar for the simple syrup and halved the amount of apples. It was very good.
