This recipe is for a quick and easy potato casserole using mozzarella cheese, sour cream, and prepared frozen cubed potatoes.

Recipe Ingredients

  • 1 (2 pound) package frozen cubed hash brown potatoes, thawed
  • 2 cups shredded mozzarella cheese
  • 1 (16 ounce) container sour cream
  • 1 (10.75 ounce) can cream of chicken soup
  • ½ cup melted butter
  • ½ cup chopped onion
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Cooking Directions

  1. 1 Preheat oven to 350 degrees F (175 degrees C).
  2. 2 Mix potatoes, mozzarella cheese, sour cream, cream of chicken soup, butter, onion, salt, and black pepper together in a casserole dish.
  3. 3 Bake in preheated oven until hot throughout and bubbly on top, about 30 minutes.

  1. This is really good. The only change I made is using fresh potatoes because I had them on hand. I'm not a big fan of potato salad, and essentially that's what this is, but it was a big hit at our house. I'll definitely take it to a party.
  2. HUGE hit! Will definitely make this again and again! Next time I’m going to add some bacon and maybe some green onion sprinkled on top!!
  3. Too greasy so I made again and I cut the butter or margarine in half. I also topped it with gluten free bread crumbs as I am gluten intolerant. My husband loved the second batch.
  4. Turned out great! The only thing I did differently was use half mozzarella and half colby-jack cheese. Everyone loved it!

  7. i been using this for years. but ontop i put 2 cups of frosted flakes mixed with a 1/4 a cup of butter. also i used potatoe obrien.
  8. I make my own version of these frequently with CHEDDAR cheese (and lots of added veg) so I was not sure we'd like this mozzarella cheese version.   9. I like to make these with extra sharp cheddar cheese instead of mozzerella. I also throw in a few spices (onion powder garlic powder fresh ground pepper chopped chives hot sauce and a little dijon mustard).
