Enjoy this hearty soup made with plenty of great ingredients and lots of taste!

Recipe Ingredients

  • 1 tablespoon olive oil
  • 5 large mushrooms, chopped
  • 2 large leeks, cleaned, and cut into 1/4 inch thick rounds
  • 6 cups chicken broth
  • 4 chicken sausages, sliced in 1/3-inch rounds
  • 1 (9 ounce) package cheese tortellini
  • 3 cloves garlic, minced
  • 3 tablespoons hot pepper sauce (e.g. Tabasco™), or to taste
  • salt and pepper to taste
  • 5 sprigs chopped fresh cilantro, for garnish

Cooking Directions

  1. 1 Place the olive oil in a skillet, and heat over medium-high heat. Stir in the mushrooms and leeks; cook and stir until they soften, about 5 minutes. Set aside until needed.
  2. 2 Meanwhile, pour the chicken broth into a large pan, and bring to a boil over medium-high heat. Add the sausage, tortellini, garlic, and hot sauce. Reduce heat to medium, and stir in the mushrooms and leeks. Cover, and simmer soup mixture for 30 minutes. Serve garnished with cilantro.

  4. This is an AWESOME soup!! I think I ate 1/2 of the pot the second it was ready. I used kielbasa instead of the chicken sausage because I think with the mushroom and leek it would be a better blend of flavors but Im sure its great either way.
  5. We liked this soup except for one thing...way too spicy! I only added 1 tablespoon of tabasco and thought we better test it before adding more. 3 tablespoons and your lips would have been on fire! Be careful with adding the tabasco!
  6. Happen to have all the stuff at home that needed to be used...YUMMY! The only change was instead of sausage (not a fan usually) I used chopped/diced chicken breast and cooked it with the leeks and mushrooms than added the broth..ect. Hope this helps I was hesitate to try but glad I did.

  8. This really is a great recipe. I used italian sausage instead of chicken sausage as my store was out of it. I increased the mushrooms for a heartier soup and used twice as many tortellini (5 cheese!). It was to die for.
