Servings 1 9-inch cheesecake Calories 492.5

This is my favorite easy cheesecake recipe. When I want cheesecake in a flash, I make this no-bake style. I love to share it with friends and family. It’s as easy as 1-2-3! Top with additional graham cracker crumbs and whipped topping, if desired.

Recipe Ingredients

  • 2 (8 ounce) packages cream cheese, softened to room temperature
  • 1 cup white sugar
  • 3 tablespoons vanilla extract
  • 1 teaspoon lemon extract
  • 1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
  • 1 (9 inch) prepared graham cracker crust
  • 1 (21 ounce) can strawberry pie filling

Cooking Directions

  1. 1 Combine cream cheese, sugar, vanilla extract, and lemon extract in a large bowl; beat with an electric mixer until smooth and creamy. Fold in whipped topping. Pour mixture into graham cracker crust and smooth evenly. Top with pie filling.
  2. 2 Refrigerate until firm, 2 to 3 hours.

Chef's Notes

Lemon extract gives a hint of tartness and is optional. I find it complements the vanilla extract. Don't use it if you like plain cheesecake; An 8-inch crust also works in this recipe; Any fruit filling can be used in place of strawberry, or top cheesecake with fresh fruit.

  1. Great recipe. Just like my grandmother's. I used shortbread cookies for the crust. It was amazing.
  2. I normally make this with dream whip, it loved this recipe
  3. Easy and tasty. Didn't have lemon extract so I use almond. Topped with cherry pie filling. I turned out great. Was a big hit at Thanksgiving.
  4. easy, quick and DELICIOUS!!!! The filling is ADDICTING!! Definitely a holiday keeper!!!
  5. I filled 8 tartlet shells for 4 dinner guests and I filled a small graham cracker crust pie shell with the remaining batter. I have frozen the pie for later use. This is slightly lighter than a regular cheesecake and very tasty.
  6. definitely will make again. My brother really liked it. Did not use the lemon extract and was excellent.
  7. I love it it is easy and quick!
  8. So tasty! I think next time I would make 2 smaller pies, only because I couldn't get the lid on. Very good and very simple! Bonus points for being a make ahead dessert.
