With fresh veggies, this is still a healthy and delicious alternative to potato chips.

Recipe Ingredients

  • 2 (15.5 ounce) cans chickpeas, undrained
  • 1 teaspoon grated garlic
  • 1 ½ tablespoons lemon juice
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
  • ⅓ teaspoon black pepper
  • ½ cup extra-virgin olive oil
  • 2 tablespoons water, or as needed
  • Veggies (such as carrot and celery sticks, bell pepper strips, and broccoli florets)

Cooking Directions

  1. 1 Pour chickpeas (with liquid) into a saucepan. Cook over medium heat, stirring, until warmed through, 3 to 4 minutes. Drain.
  2. 2 Pulse chickpeas, garlic, lemon juice, cumin (if using), salt, and pepper in a food processor until chickpeas are mashed. With machine running, add oil gradually through food chute, and puree until smooth. Add water as needed for desired consistency. Serve with veggies.

  1. I added 3/8c lemon juice instead. Still super bland! But bland can be fixed. I also did not drain the chick peas and did not add water since I had added so much lemon juice. So I avoided the dryness problem some others mentioned.
  2. I didint like this recipe. My son didnt either. All I tasted was the strong virgin olive oil flavor. Nor for me.
  3. This was delicious. It was so quick to prepare I can t see myself ever getting store-bought again. I added a little extra salt and cayenne. Clearly there would be any number of slight variations to suit individual taste but this recipe produces a fantastic base.
  4. Easy to make and my family loves it. I toast pine nuts for topping.

  7. Had to go back and add more salt and added ceyanne Pepper. Was good without changes, just a little bland.
  8. Awesome, cheap ingredients, and so easy! Delicious hot! We add some cayenne or chipotle powder too and offer tortilla chips as well as veggies for dipping. Take Beano with this recipe. We've made it twice since finding it in the All Recipes Magazine.
