Always smooth, firm and delicious NO YOLKS® Noodles hold together this perfect holiday side dish or dessert with sweet, creamy custard.

Recipe Ingredients

  • 8 ounces NO YOLKS® Extra Broad Noodles
  • 1 (8 ounce) package low-fat cream cheese, at room temperature
  • 2 tablespoons unsalted butter, melted
  • 1 cup sugar
  • 4 large eggs large eggs
  • 1 ½ cups reduced-fat milk
  • ½ cup raisins
  • 1 cup cornflakes cereal
  • 2 tablespoons sugar
  • ¼ teaspoon cinnamon

Cooking Directions

  1. 1 Prepare noodles according to package directions.
  2. 2 Preheat oven to 350 degrees F.
  3. 3 Combine cream cheese, butter and sugar in bowl of electric mixer. Cream at medium speed, scraping down bowl occasionally. Add eggs, one at a time and beat in. Add milk, a little at a time. Remove bowl from mixer. Stir in noodles and raisins. Spoon mixture into greased deep, 3-quart baking pan. Sprinkle corn flakes over noodle mixture. Combine remaining sugar and cinnamon and sprinkle over corn flakes.
  4. 4 Bake 1 hour or until pudding is firm and knife inserted near center comes out clean. Remove from oven. Let set for 10 minutes before slicing.

  1. Great to start. Skipped the corn flakes. Creaming the butter cream cheese eggs and milk you can add the cinnamon nutmeg and some more sugar. Then mix it all together and dump into the buttered pan and bake.
  2. I added vanilla and extra cinnamon the flavor of the bottom portion was good. The noodles sticking out the top were hard. Maybe covering with foil would have helped? Special K on top didn't really add anything for us. Good idea not quite there.
  3. I didn't have a 3-quart baking dish so split this into two 1.5-qt baking dishes and baked for only 45 minutes. It came out perfectly!   4. This is basically a "Noodle" bread pudding that is surprisingly good. I have admit I thought it a little ironic to use eggs in a recipe calling for a No Yolks product.
