This is a quick and easy salad idea with a homemade vinaigrette drizzled over a mixture of lettuce, mandarin oranges, and almond slivers.

Recipe Ingredients

  • 3 tablespoons canola oil
  • ¼ cup red wine vinegar
  • 2 tablespoons white sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon dry mustard
  • 1 head red leaf lettuce, torn
  • 1 (11 ounce) can mandarin oranges, drained
  • ¼ cup slivered almonds, toasted

Cooking Directions

  1. 1 Combine canola oil, vinegar, sugar, lemon juice, salt, and dry mustard in a jar with a lid. Shake until ingredients combine into a dressing.
  2. 2 Toss lettuce, oranges, and almonds together in a large mixing bowl. Drizzle dressing over the salad and toss to coat.

  1. Amazing. used mixed greens . Was a total hit at Thanksgiving this year. A TOTAL KEEPER .
  2. I added more apple, avocado and it doesn’t say to put in mandarin oranges but the picture showed it so I did. 10 oz if greens is a lot without extra fruit.
  3. Have made this twice, omitting the almonds to cut calories. Delicious sweet salad!
  4. Very refreshing! I made it with half the sugar and added shredded carrots. It was a little acidic. I will reduce the vinegar next time. I think using fresh oranges would also be good and you could increase the amount of toasted almonds.
  5. Made this salad for our Super Bowl party last weekend. It was a group favorite. I only changed the recipe by substituting roasted almonds with caramelized almonds.
  6. The key to this salad is the mixture of the bitter greens the sweet oranges and the crunchy almonds...simple & delicious. The dressing is good but I just use a little balsamic vinegar and olive oil.
  7. Very acidic. Instead of sugar used some of the drained mandarin orange juice and a squirt of honey also a little more oil. Added cranberries and sweet onion.
