A fantastic blend of orzo and fresh veggies in a white wine sauce that was invented by my wonderful boyfriend!

Recipe Ingredients

  • 2 tablespoons butter
  • ¼ cup olive oil
  • 1 large white onion, chopped
  • 2 fresh jalapeno peppers, diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • ½ cup white wine
  • 1 large tomato, chopped
  • 1 (10 ounce) can corn, drained
  • 2 tablespoons minced garlic
  • 4 fresh mushrooms, sliced
  • 1 (16 ounce) package dried orzo pasta

Cooking Directions

  1. 1 Heat butter and oil in a large skillet over medium heat. Stir in onion, jalapeno, and red, green, and yellow peppers. Pour in white wine; cook 5 minutes. Stir in tomato, corn, garlic, and mushrooms; cook 10 minutes.
  2. 2 Meanwhile, cook orzo according to package directions. Drain, and toss orzo with sauteed vegetables.

  4. This is very tasty colorful and simple to make. I tripled the amount mushrooms and left out some of the peppers but this recipe is great because you can suit it to your taste.

  7. This recipe makes a lot of food so expect leftovers! It's also pretty bland but perked up after I added a bit of rosemary and thyme.
  8. DELICIOUS!!! I was looking for a recipe similar to one I had at a restaurant and this was amazing! I added 1/2 cup of fresh cream to make it more sauce-y I also substituted chorizo sausage for the hot peppers and I served it over raviolis. I'm definately making it again!
  9. This is incredible! If you don't like spice leave the jalapenos out and you will not miss out on the flavor. Try using squid instead of the orzo. Sounds strange... but it's delicious.
