Crispy, rich red potatoes roasted with onion and bacon. These are really yummy, and great with steak…don’t skimp on the butter.

Recipe Ingredients

  • 5 pounds red potatoes, thinly sliced
  • 1 onion, finely chopped
  • 6 slices bacon, chopped
  • ½ cup butter, diced
  • salt and pepper to taste

Cooking Directions

  1. 1 Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch casserole dish.
  2. 2 Place potatoes in an even layer in greased dish. Sprinkle onion and bacon over potatoes, then dot with butter. Cover dish with foil.
  3. 3 Bake in preheated oven for 45 minutes. Remove foil and stir potatoes. Turn oven to broiler setting and allow potatoes to brown for approximately 5 minutes, until crispy. You may need to stir every minute or so to achieve even browning. Serve immediately.

  1. While the over all taste is accomplished we are not thinking heart smart.
  2. Way too much grease. To really save cook the potatoes in the oven with just a little sprinkle of olive oil cook the bacon separately then dice it and put on the potatoes after they are done. No added butter is necessary.
  3. No need to use butter there is enough fat in the bacon(Just plain YUMMY!).

  5. I think I used too much butter or maybe my bacon wasn't lean enough because I found them a little greasy BUT they tasted great. I'll definately make these again.   8. Absolutely delicious. Definitely not for those watching their fat or cholesterol. I added extra bacon and used red onion and the house smelled wonderful for hours.
  9. Good recipe. I tweaked it a little bit, adding more bacon and a handful of shredded cheese at the end. Defintely not for the calorie or cholesterol counters out there. I agree with the note to not skimp on the butter. Yum!
