Recipe Ingredients

  • 2 tablespoons coconut oil
  • 1 large yellow squash, shredded
  • 1 large tomato, cut into large chunks
  • 1 cup walnuts
  • 3 cloves garlic, minced

Cooking Directions

  1. 1 Melt coconut oil in a skillet over medium heat. Stir squash, tomato, walnuts, and garlic into coconut oil; cook and stir until heated through, 3 to 5 minutes.

  2. I made this side dish and I will be making it many more times. It was so easy and everyone enjoyed the dish. I added a small yellow onion and cut the squash in circles not shredded. I believe the onions added even more flavor. The walnuts were a big hit with the family.

  6. Thanks this had a lot more flavor than it sounded like it would. I used olive oil instead of coconut oil and used 1/2 c cashews.
